Simple fried rice

INGREDIENTS:
1 cup rice
2 Tablespoon oil
1  onion, chopped
1  carrot, diced
2 celery stalkers, diced
2 eggs, beaten
½ cup of peas, defrosted
Soy sauce

METHOD:

Cook rice according to packet or I have inserted a handy YouTube tutorial below.

Heat 1 TB of oil in a fry pan. Sautè chopped onions in oil. Fry until translucent (clear). Pour eggs into pan and fry so that it forms omelet. Once cooked roll up and place on a chopping board. Slice rolled egg into strips.

Heat 1 TB of oil in frying pan. Add cooked rice and fry, stirring on occasion. Add soya sauce and stir to make sure that all the rice is covered. Do not sure the rice too much or it will go mushy.

Put veggies and egg back into pan. Cook for a further couple of minutes - I like my veggies crunchy, but if you don't you can cook for longer.

When finished put in your favourite bowl and enjoy.
